- Tomato-Avocado Salad

- 10 roma tomatoes, quartered
- 1 ripe avocado, cut into medium chunks
- 4 oz feta cheese, cubed
- 3-4 fresh basil leaves, shredded
- olive oil
- balsamic vinegar
- lemon juice
- salt
- pepper

- Cut and mix the tomatoes, avocado, feta, and basil. drizzle
- olive oil and vinegar on this, plus about 1 tsp. lemon juice
- or the juice of 1/2 of a fresh lemon. add salt and pepper to taste.
- mix, let sit for an hour before serving.
